丝路名馔“驼蹄羹”杂考

＂驼蹄羹＂,即以骆驼足掌为原料烹饪的羹醢类肴馔,出现于魏晋时,唐以后逐渐知名,被认为是上等肴馔而受到许多文人骚客的吟诵,元代被列入＂八珍＂。为防止长途运送导致腐败,驼蹄原料须以红曲浸过,驼掌为结缔组织,其烹饪方式为文火煮烂,切片后加调味料烹煮成羹醢类肴馔。塞外驼蹄而成中华知名肴馔,是丝绸之路饮食文化交融的结果。
