微生物发酵生产赖氨酸的研究进展

摘    要:赖氨酸是用发酵法生产的一种人体及动物必需氨基酸,被广泛地用于医药、营养食品和饲料等方面。文章概括了近几年用全球微生物发酵生产赖氨酸的概况,并介绍了由基因重组、基因扩增的方法,包括用可检测识别的染色体DNA重组,利用可检测识别的杂交质粒进行目的基因重组,用PCR技术扩增目标基因的重组等生物技术进行的赖氨酸生产菌株的研究进展。对ε-聚赖氨酸这种新型防腐剂、乳化剂、食疗剂的微生物发酵生产菌的选育及其生产和应用进行了综述。

Abstract:Lysine is produced by fermentation. It is a kind of essential amino acid of human and animal and is widely used in medicine,nutrition,food and feed,etc. This paper summarizes the recent global microbial fermentation production of arginine and introduces lysine method such as gene recombination,gene amplification,which includes detection and recognition of chromosome DNA recombination,recombinant plasmid with hybridization detection and recognition,etc. It also summarizes the breeding of microbial fermentation of bacteria on polylysine and its application in food industry.
