台湾食品文化及其对闽台食品产业合作的启示

本文在界定食品产业文化内涵的基础上，提出台湾食品产业文化具有根植与多元性两大特征，并深入分析了此两大特征的具体表现形式，借鉴沙因的“洋葱模型”，从食品产业发展的基本假设、制度与规范、各种形式的产业符号三方面构建了食品产业文化的分析模型，结合台湾食品产业的发展现状与特点，归列出了台湾食品产业文化体系。最后，文章提出在闽台先行的食品产业合作与交流过程中，双方均应树立正确的观念对待台湾先进的食品产业文化，台湾食品产业应在反哺过程中实现创新升级，双方的食品产业合作过程中既不可忽视对先进文化的深入学习与研究，也不可忽视双方产业文化的整合与共生共荣。

The Culture of Food Industry in Taiwan and Its Inspiration on the Cooperation in Food Industry between Fujian and Taiwan

On the basis of defining the culture of food industry, the present paper indicates two features that Taiwan food industry has： culturally-rooted and culturally-diverse, and conducts an in-depth analysis of the specific forms for the two features. Referring to ＂onion model＂ by Edgar H. Schei, the writers of the paper focus on three aspects-the basic assumption of food industrial development, system and norm, and various forms of industrial sign-to build the analysis model for the culture of food industry. Then combining the present situation and the characteristics of the food industry in Taiwan, the writers have worked out the cultural system of the food industry in Taiwan. Finally, this paper suggests that in the process of cooperating and communicating, the food industry in Fujian and in Taiwan should establish correct attitude towards the advanced culture of food industry in Taiwan, and Taiwan food industry should upgrade itself with the feedback from the cooperation. In sum, both sides should study the advanced culture and carry out reform and co-development based on the cultures from both sides.
