摘    要:甲壳质是一种天然的生物高分子,目前主要利用化学加工法(酸碱法、酶法等)从虾、蟹壳中制备得到。甲壳质的溶解性能较差,通过脱乙酰化反应可得到壳聚糖,即可溶性甲壳质,甲壳质、壳聚糖可以通过一系列反应得到相应的衍生物。甲壳质、壳聚糖及其衍生物有许多优良特性,因而在许多领域得以应用。

Abstract:Chitin is a kind of natural macromotecule.It can be obtained from the shell ofshrimps and crabs by chemical methods(acid-base or enzyme methods).Chitin has lowersolubility in water and other usual solvents. Chitosan is obtained by deacetylation reaction ofchitin.Chitin and Chitoson can change into their derivatives by a series of reactions,Cbitin,chitoson and their derivatives have some special properties, They are widely applicated inmany fields.
