摘    要:清木民初,上海存在着大量的食品安全问题。为了应对日渐突出的食品卫生隐患与危机,上海公共租界、法租界和华界从组织机构、法规建设、技术保障等方面开展了具有现代意义的食品卫生管理工作,成为近代中国食品卫生事业制度化的先行地区。到20世纪二三十年代,上海已经初步建立起了食品安全监管体系,不过依然存在不少问题。

Abstract:During the late Qing Dynasty and early Republic of China, there were a large number of food safety problems in Shanghai. In response to increasingly prominent food hygiene risks and crises, International Settle-ment, French Concession and Chinese community in Shanghai implemented modern food hygiene measures in terms of organization, laws, and technical support. Shanghai became the first region with the food safety regulatory sys-tem in China. During the 1920s and 1930s, Shanghai initially established a food safety regulatory system; howev-er, it still had many problems.
