摘    要:张颔先生释傅山《麦连]麦善]口温]陀南赋》之“麦连]麦善]”为一种以莜面为原料的山西风味食物,其解释不甚准确。“麦连]麦善]”实为“碾转”,是我国古代产麦区把将熟尚未熟的青麦磨制而成、以庆贺麦收的一种尝新风俗。

Abstract:Mr.Zhang Han refers the"Nianshan" in Tax of Nianzhuan Wuntunnan to one kind of Shangxi-flavoured food made of wheathen,this explanation is not accurate.Actually "Nianshan" means "Nianzhuan",which is a tasting-new custom in ancient times when people in the wheat production area grinded the approximately riping wheat to celebrate the wheat harvest.
