高校“食品科学与工程专业”新的实践教学体系

摘    要:在阐述食品科学与工程专业的学科特点和人才培养目标的基础上,论述了构建食品科学与工程专业实践教学体系的指导思想和基本思路,并详细论述了其实践教学体系,即实践教学目标体系、实践教学内容体系、实践教学管理体系和实践教学条件体系。在管理体系中,说明了实践教学内容管理、实践教学运行管理和实践教学质量管理的措施和方法。提出了食品科学与工程专业新的实践教学运行模式,即认知实习阶段、基本技能训练阶段和技能训练强化提高阶段。

Abstract:On the basis of explaining the discipline characteristics of specialized food science and project and talent's training objectives,the guiding and basic thoughts on the structures of the food science and professional practice were expounded;and its practical teaching system was described in detail,namely,practice teaching goal system,practice teaching content system,management system and terms system.In management system,the measures and methods in practice content management,course management and quality management were illustrated.At last,the practical teaching operational modes of food science and project with new specialty were put forward,i.e.cognition practice stage,basic skill strain stage,skill train stage with strengthen and raising.
