| 摘 要： | 随着旅游业的普遍展开和饭店内外部环境的频繁变化，饭店经营的风险越来越大，加强饭店业的风险识别、评价、控制和管理是饭店管理的主要问题。论题主要从风险的类型、风险管理的程序和规避风险的主要措施三个方面探讨了饭店业的风险管理。
