摘    要:梳理重庆地区榨菜业由弱小到壮大的历史,可以看出,生产技术的变革在其中发挥了重要的作用.无论是配料这样核心的技术还是包装工艺,都在不断创新.同时,也得力于国内外销售市场的开拓.就其产销组织形式而言,尚存在一些不足,规模性企业寥寥无几,多为独资或合伙企业.

Abstract:Through the history of the Zhacai industry in Chongqing, it can be seen that the development of production technologies has played an important role in it.Both the core technology of ingredients and the packaging technology improved constantly.At the same time, the expansion of domestic and international sales market also made its contribution.Because of very few large-scale enterprises, and mostly sole proprietorship or partnership ones, there were still some shortcomings with respect to the forms of production and marketing organizations.
