FOREIGNERS who have been to Beijing are probably familiar with the Beijing International Hotel near the main railway station. It's the four-star hotel where I work as a chief cook. My job is to manage nine kitchens—both Chinese and Western. I have been a chef for 34 years. After graduated from school in 1964, I studied Chinese cuisine for three years. I believed that it was a job worth doing. In the past, people looked down on this occupation; they thought it was a low-class job because cooks were always serving other people. I, however, found the job very interesting. After all, I reasoned, everyone needs to eat. If we could make eating into a kind of art or a science, eating could become an act of culture. People engaged in the food industry treat the act of eating with a respect that most people cooking at home do not feel. But for those of us who work in prestigious hotels whose guests come from all over the world and have different customs and tastes, it is our job to put the Chinese cooking cultu  相似文献

More than 350 students, from 11 universities in Zhengzhou (capital of Central China's Henan Province), recently attended a training course on employment at Henan Institute of Education. The course was intended to help female university students, especially those who were about to graduate, find work and/or start a business. It was a custom in the Liao Dynasty to decorate tombs with murals. The paintings in Zhao Dejun's tomb, excavated in Beijing, provide a well-known example. During the Five Dynasties period, Zhao Dejun was a warlord in Youzhou, which became the southern capital of Nanjing in the Liao Dynasty (and even later, was renamed Beijing). Bronze Elephant     
A rare find among Shang Dynasty bronzes in China, this bronze elephant was unearthed in a hillside in Liling County, Hunan. It was probably buried by slave owners as a sacrifice to the mountains and lakes. The bronze elephant served as a wine vessel. Wine was poured into the large opening at the elephant's back, and was served through its trunk. It is 22.8 cm tall, 26.5 cm long and weighs 2.8 kg. The body of the vessel was carved with animal motifs. The front of the trunk, for example, is carved into the shape of a phoenix with a hooked beak. A tiger is crouched on the comb of the phoenix, and a snake curls out of its beak. The base of the trunk is decorated with another snake, with its head near the mouth of the elephant. I had my most delicious meal with noodles in a small village along the Yellow River. It was on a March day a decade ago, when I had just moved to Shanxi Province. I was out in the field as a reporter, and was exhausted and starving after traveling more than 50 kilometers on foot and by bus. WHEN Zhang Hongyan plays the completely traditional Chinese musical instrument, the pipa, she is called a "pipa fairy maiden" by her audiences, "the pipa queen with outstanding talent and appearance" by the Hong Kong press and "a national flower of the Women Philharmonic Orchestra" in Singapore. Having completed her master's degree program at the folk music department of the Central Conservatory of Music. Zhang is continuing there as a teacher. On the unforgettable night of June 9, 1992, Zhang Hongyan presented her first solo concerto concert at the Beijing Concert Hall, in cooperation with the celebrated Central Philharmonic Orchestra based in Beijing and its famous conductor Hu Yongyan. This concert made her the first folk musical instrument player to present a special concerto concert in cooperation with a Western style orchestra. It is the result of many years of effort. Saving The Baiji     
AT a conference of the World Whaling Commission in Cambridge, England, in 1981, a special video tape caught the attention of experts at the meeting. It was a tape about the artificial raising of Baiji ill China, brought by Chen Peixun, head of the Baiji Coordinative Group and a research fellow of the Institute of Hydrobiology, the Chinese Academy of Sciences. Unearthed from a Liao tomb at Zhangjia Yingzi, Jianping County, Liaoning Province in 1956, this gilded silver crown with double-dragon pattern is 19 cm high and 20.9 cm in diameter. Its shape is suggestive of a mountain: higher in the middle and lower on both sides. On the front is a carving in the shape of a pearl surrounded by an S-shape pattern symbolizing good fortune. There is a lively dragon on either side. The complete design is based on the old theme "two dragons play with a pearl."
