当前,食品安全问题在中国已经逐渐成为一种严重威胁公众健康的社会风险。公众的食品风险感知可以有效解释他们的食品安全心理和潜在行为,这方面的研究对食品风险治理中的风险评估和风险沟通都具有重要的理论价值与实践意义。为了深入研究公众食品风险感知维度及其影响因素,本文在西安市部分居民大米风险感知实证调查基础上,通过因子分析识别出居民食品风险感知的主要维度,并采用多元回归分析对食品风险感知及其维度与社会心理影响因素、人口统计变量之间的关系进行了验证。  相似文献

大豆是一种富含蛋白质的油料作物,含有较高的营养保健价值和诸多功能特性。本研究利用碱提酸沉法提取大豆蛋白,通过差示扫描量热仪测得大豆分离蛋白的热学性质,利用流变仪测定形成的大豆分离蛋白凝胶的强度,最终表征和探讨了微生物转谷氨酰胺酶(MTGase)对大豆分离蛋白胶体形成的影响。以蛋白凝胶的机械模量为指标进行正交实验,得到蛋白形成凝胶的最适条件。  相似文献

The paper narrates the history of “texturometers”, devices that imitate the human biting mechanism and are used by food scientists in experiments on food texture. Two interrelated processes, characteristic of the emergence of industrialized food production in the twentieth century, are examined through this history of mechanical tasting. First, the paper surveys the pervasive project of transforming the phenomenological qualities of flavor and food texture into robust “objective” and “standardized” data. In constructing and using biomimetic texturometers, food sensory scientists attempted to translate texture qualities such as tenderness, crispness, crunch and chewiness into codified properties by producing formal definitions and graphical representations – an example of how the pursuit of objectivity and standardized knowledge coevolved with the rise of mass production and the emergence of sensory sciences. Secondly, the texturometers are related to an overall “flavorization”; that is, a historical process by which the complexes of sensory impressions became increasingly important for the production and consumption of food in late-modern industrialized societies.  相似文献

This paper reports on findings from a qualitative study that focused on the quality and adequacy of preparation of youth in congregate care for independent living. This study, conducted in New York, NY, USA, explored the extent to which youth feel prepared to leave care and the opportunities they are given to participate in planning and decision‐making regarding issues that personally affect their future. Interviews were conducted with professionals and young adults who had exited foster care after placements in congregate care settings. Both professionals and young adults stated concerns about the quality of independent living preparation. Many young adults stated that they were not ready to live independently and expressed concerns about failure of staff to begin preparing youth sufficiently in advance of their discharge dates. Young adults also reported limited opportunities to participate in the planning and decision‐making processes affecting them. Recommendations for improvement of independent living preparation are proposed.  相似文献

The purpose of this study was to identify factors relevant to social work students' perceived knowledge of and preparation for group-work practice. In addition, the experiences of students in the classroom and in the field are discussed in relationship to these variables. Although classroom and field experiences were significant, exposure to group in the field placement was a much stronger predictor of group-work knowledge. Students reported feeling most knowledgeable about the concepts of mutual aid, diversity, group culture, and group phases. Reported gaps in learning were related to research and legal issues associated with group work.  相似文献

Skillful cofacilitation of groups provides group members with shared leadership, combined knowledge, and broadened problem-solving capability. Interdisciplinary cofacilitation offers group members different points of view and diverse professional expertise. This article presents a support group approach for parents of children diagnosed with autism and describes the benefits of interdisciplinary cofacilitation by social workers and early childhood special educators. This longitudinal study examined the long‐term effects of economic preparation and social activity on life and family relationship satisfaction among retirees, particularly baby boomers. Data was obtained from the 2009 and 2011 Korean Retirement & Income Panel Study. A fixed effects model was employed to estimate unobservable individual‐specific effects and to control for study participants’ individual characteristics. The results show that both economic preparation and social activities have long‐term effects on baby boomers’ life and family relationship satisfaction. This study reveals that multidimensional aspects of preparation increase the long‐term impact of life satisfaction for retirees.  相似文献

利用分段加入甲基丙烯酸缩水甘油酯、丙烯酸甲酯、丙烯酸丁酯和γ-甲基丙烯酰氧基丙基三甲氧基硅烷的自由基聚合方法合成了大分子偶联剂———功能性聚丙烯酸酯,并对聚合物的结构进行了表征。将大分子偶联剂———功能性聚丙烯酸酯应用到纳米二氧化硅改性环氧树脂固化物体系中,并对固化物的热性能及断裂横截面形貌进行研究。结果显示:与单纯的纳米二氧化硅改性环氧树脂固化物相比,加入大分子偶联剂———功能性聚丙烯酸酯后,固化物的玻璃化转变温度变化较小,起始热分解温度降低,断裂横截面的形貌呈现明显的韧性断裂,环氧树脂固化物的韧性得到明显提高。  相似文献
