Food scandals that happened in recent years have increased consumers' risk perceptions of foods and decreased their trust in food safety. A better understanding of the consumer trust in food safety can improve the effectiveness of public policy and allow the development of the best practice in risk communication. This study proposes a research framework from a psychometric approach to investigate the relationships between the consumer's trust in food safety and the antecedents of risk perceptions of foods based on a reflexive modernization perspective and a cultural theory perspective in the hope of benefiting the future empirical study. The empirical results from a structural equation modeling analysis of Taiwan as a case in point reveal that this research framework based on a multidisciplinary perspective can be a valuable tool for a growing understanding of consumer trust in food safety. The antecedents in the psychometric research framework comprised reflexive modernization factors and cultural theory factors have all been supported in this study except the consumer's perception of pessimism toward food. Moreover, the empirical results of repeated measures analysis of variance give more detailed information to grasp empirical implications and to provide some suggestions to the actors and institutions involved in the food supply chain in Taiwan.  相似文献

This study develops a longitudinal perspective on consumer confidence in the safety of food to explore if, how, and why consumer confidence changes over time. In the first study, a theory-based monitoring instrument for consumer confidence in the safety of food was developed and validated. The monitoring instrument assesses consumer confidence together with its determinants. Model and measurement invariance were validated rigorously before developments in consumer confidence in the safety of food and its determinants were investigated over time. The results from the longitudinal analysis show that across four waves of annual data collection (2003–2006), the framework was stable and that the relative importance of the determinants of confidence was, generally, constant over time. Some changes were observed regarding the mean ratings on the latent constructs. The second study explored how newspaper coverage of food safety related issues affects consumer confidence in the safety of food through subjective consumer recall of food safety incidents. The results show that the newspaper coverage on food safety issues is positively associated with consumer recall of food safety incidents, both in terms of intensity and recency of media coverage.  相似文献

针对消费者对国内生鲜农产品质量安全的"信任危机",本文构建了植入消费体验的生鲜电商C2B2B2C模型,让碎片化的消费者通过互联网就近聚合为社群化的食物社区,生产者通过合作社聚合为规模化生产基地,食物社区与生产基地借助电商平台进行产销对接、以销定产和消费体验。研究表明,在传统B2C模式下消费者只能依据供应商提供的信息进行Stackelberg博弈和有限消费体验,购买需求较少。当植入充分的消费体验后,生产者与消费者融合为prosumer,购买需求随消费者对生产者的信任度增加而增加。实证揭示,农耕生产、质量追溯、物流配送、网购操作、产品呈现和售后服务都会显著影响消费体验,电商平台要实现商业可持续性发展必须为消费者设置这些全面而丰富的体验场景。  相似文献

Although public perceptions of food-related hazards receive much media comment and debate, the research literature on such perceptions is sparse and piecemeal. In the reported study, 216 people completed a questionnaire relating to their perceptions of the "risk characteristics" of potential hazards associated with various aspects of food production and food consumption. Responses were examined via principal-components analysis to obtain a structural representation of risk perception of the kind provided by Fischhoff, Slovic, and their colleagues in their seminal psychometric work.(1,2) A three-component solution accounting for 87% of the variance was obtained, with the dimensions labeled as "severity,""unknown," and "number of people exposed." The findings also yielded information pointing to evidence of the phenomenon of unrealistic optimism. We conclude that our findings offer a useful base upon which further in-depth research integrating different perspectives on risk perception with respect to food-related hazards may be developed.  相似文献

Few scholars doubt the importance of trust in explaining variation in public perception of technological risk. Relatively little, however, is known about the particular types of judgments that people use in granting or withholding trust. This article presents findings from an empirical study that explores several dimensions of trust relevant for citizens' judgments of scientists involved in the development of GM food. The relationship between particular dimensions of trust and perceptions of GM food risk is also explored, using structural equation modeling. Results suggest that trust judgments based on the perception of shared values are most important in relation to GM food risk, but that judgments about scientists' technical competence are also important.  相似文献

The 2008 global financial crisis has been compared to a "once-in-a-century credit tsunami," a disaster in which the loss of trust and confidence played key precipitating roles and the recovery from which will require the restoration of these crucial factors. Drawing on the analogy between the financial crisis and environmental and technological hazards, recent research on the role of trust and confidence in the latter is used to provide a perspective on the former. Whereas "trust" and "confidence" are used interchangeably and without explicit definition in most discussions of the financial crisis, this perspective uses the TCC model of cooperation to clearly distinguish between the two and to demonstrate how this distinction can lead to an improved understanding of the crisis. The roles of trust and confidence—both in precipitation and in possible recovery—are discussed for each of the three major sets of actors in the crisis, the regulators, the banks, and the public. The roles of trust and confidence in the larger context of risk management are also examined; trust being associated with political approaches, confidence with technical. Finally, the various stances that government can take with regard to trust—such as supportive or skeptical—are considered. Overall, it is argued that a clear understanding of trust and confidence and a close examination of the specific, concrete circumstances of a crisis—revealing when either trust or confidence is appropriate—can lead to useful insights for both recovery and prevention of future occurrences.  相似文献

This study estimates the effect risk characteristics, described as outrage factors by Hadden, have on consumers' risk perceptions toward the food-related biotechnology, recombinant bovine growth hormone (rbGH). The outrage factors applicable to milk from rbGH treated herds are involuntary risk exposure, unfamiliarity with the product's production process, unnatural product characteristics, lack of trust in regulator's ability to protect consumers in the marketplace, and consumers' inability to distinguish milk from rbGH treated herds compared to milk from untreated herds. An empirical analysis of data from a national survey of household food shoppers reveals that outrage factors mediate risk perceptions. The results support the inclusion of outrage factors into the risk perception model for the rbGH product, as they add significantly to the explanatory power of the model and therefore reduce bias compared to a simpler model of attitudinal and demographic factors. The study indicates that outrage factors which have a significant impact on risk perceptions are the lack of trust in the FDA as a food-related information source, and perceiving no consumer benefits from farmers' use of rbGH. Communication strategies to reduce consumer risk perceptions therefore could utilize agencies perceived as more trustworthy and emphasize the benefits of rbGH use to consumers.  相似文献

The causal structure of the determinants of trust in industry, government, and citizen's groups in Japan was investigated on the basis of Peters et al. (1997). A preliminary survey of the adequacy of the hypotheses proposed by Peters et al. in Japan was made. A set of hypothesized determinants of trust in Japan was proposed based on results of the preliminary survey. Questionnaires concerning perceptions of trust in the organizations and the proposed determinants were sent by mail to residents in the area where environmental risk problems had emerged. The data were analyzed by covariance structure analysis to construct models of trust in industry, government, and citizen's groups. As a result, "openness and honesty," "concern and care," "competence," "people's concern with risks," and "consensual values" were found to be factors directly determining trust. Suggested in particular is that "openness" of an organization is not attained merely by information disclosure, but also by bi-directional communication with the people. Food chain integrity demands strengthening the position of end consumers in the food system. Shaping this consumer-centric agenda leads to a multi-dimensional quest where actors in the food chain need to remodel their production, processing and disclosure norms by focusing on end consumers’ expectations. Food chain integrity so far has largely been explained using the angles of fraud and criminality to mainstream the criticality of curbing intentional contamination in food chain operations. However, the view which accounts for how food safety and food quality expand the understanding of food chain integrity remains underdeveloped. Addressing this concern, we conceptualize the interaction space between the notions of food chain integrity, food safety and food quality using a unifying lens of supply chain governance in the food chain. In doing so, we outline the safety and quality-oriented arcs of food chain governance that are instrumental in creating consumer-centric processes. Drawing from systematic reviews, a multi-disciplinary article set is constructed involving the scholarships of food sector management, logistics and supply chain management, marketing and general management. The key findings outline five principal themes to notionally characterize the targeted interaction space and set the foundation of consumer-centric supply chain governance for food chain integrity. Besides discussing diverse governance areas such as industrial co-regulation, newer emphasis areas for internal/external chain integration and the need for consumer integration in food chain processes, the thematic leads are distilled further to outline macro- and micro-level arcs of consumer-centric food chain governance along with strategic pathways for future research.  相似文献

In the context of the recent recalls of contaminated pet food and lead‐painted toys in the United States, we examine patterns of risk perceptions and decisions when facing consumer product‐caused quality risks. Two approaches were used to explore risk perceptions of the product recalls. In the first approach, we elicited judged probabilities and found that people appear to have greatly overestimated the actual risks for both product scenarios. In the second approach, we applied the psychometric paradigm to examine risk perception dimensions concerning these two specific products through factor analysis. There was a similar risk perception pattern for both products: they are seen as unknown risks and are relatively not dread risks. This pattern was also similar to what prior research found for lead paint. Further, we studied people's potential actions to deal with the recalls of these two products. Several factors were found to be significant predictors of respondents’ cautious actions for both product scenarios. Policy considerations regarding product quality risks are discussed. For example, risk communicators could reframe information messages to prompt people to consider total risks packed together from different causes, even when the risk message has been initiated due to a specific recall event.  相似文献

It is common in catastrophic food-contamination events that consumers fail to adjust instantaneously to a normal consumption level. One explanation is that consumers only gradually accept new positive information as being trustworthy. The gradual establishment of the trustworthiness of the released information depends on both positive and negative media coverage over time. We examine the individual "trust" effects by extending the prospective reference theory (Viscusi, 1989) to include a dynamic adjustment process of risk perception. Conditions that allow aggregation of changes in risk perceptions across individuals are described. The proposed model describes a general updating process of risk perceptions to media coverage and can be applied to explain the temporal impact of media coverage on consumption of a broad range of goods (food or nonfood). A case study of milk contamination is conducted to demonstrate consumer demand adjustment process to a temporarily unfavorable shock. The results suggest that effects of positive and negative information to adjustment of consumption and risk perception are asymmetric over time.  相似文献

Surveys in three U.S. localities (n = 523) with proposed or existing land-based aquaculture facilities probed trust's relationship with perceived net benefits and public intentions to cooperate with siting of this novel technology. The trust, confidence, and cooperation (TCC) model posits that shared values shape willingness to be vulnerable to others (trust), while past performance shapes certainty that others will behave as expected (confidence). Trust affects confidence given moral outweighs performance information, possibly varying by familiarity. Other research suggests that trust shapes benefit and risk perceptions, which drive cooperation (defined here by potentially observable behavior: voting on siting, trying to influence government decisions directly or through citizen groups, and buying or eating facility fish). Confirmatory factor analyses suggested that a two-factor model fit the trust/confidence measures better than a one-factor model or a two-factor model without inter-factor correlation, indicating (despite a strong association of trust and confidence) that they are empirically distinct. Path analyses suggested that trust had stronger direct effects on cooperation than did confidence, reflecting the TCC notion that moral information underlying trust judgments is more influential, and stronger indirect effects through benefit-risk judgments. Model fit was better than if the benefit-risk mediator was omitted. Trust in government had a small direct effect on cooperation and confidence, but a large effect on trust in the corporation, and model fit was much worse if any of these paths was omitted. Low familiarity with the project lowered both model fit and trust–confidence association. We discuss implications for risk analysis theory and practice.  相似文献

A survey of 798 New Jersey residents examined relationships among residents' neighborhood activities, perceptions of neighborhood quality, trust of experts, support for rebuilding cities and equal rights, and degree of optimism. Neighborhood activities increased with lack of trust and optimism. These personality characteristic measures were folded into multidimensional constructs that included local environmental hazards, respondents' ratings of their previous neighborhoods, and some demographic variables. Pessimism and values that support equal rights and rebuilding cities were weakly associated with poor quality neighborhood ratings.  相似文献

The psychometric approach developed by Slovic and his co-workers has been effectively used to assess risk perceptions associated with different food-related hazards. However, further examination (using questionnaire data and partial correlation techniques) has indicated that technological hazards are highly differentiated from lifestyle hazards, in terms of both hazard control and knowledge about the hazard. Optimistic bias was also seen to vary between hazards. Further research has focused on a particular hazard, genetic engineering. Risk perceptions associated with genetic engineering are underpinned by ethical concern and questions relating to perceived need for the technology, as well as perceptions of risk or harm. However, increasing the specificity of hazard stimuli was found to alter the factor structure of underlying risk perceptions. The utility of preference mapping procedures in determining individual differences in trust in risk regulators is also discussed.  相似文献

The determinants of store choice on the part of the consumer are complex. Our study indicates that consumers find the issues relevant to store choice as lacking in quality and certainly not congruent nor tangential to the retail marketing concept. As our model shows, perceptions are developed through stimuli that are created by the retail environment both internal and external. If these were the only issues retailers had to deal with, their challenge in understanding consumer store choice behavior would be formidable. Add to those dimensions the perceptions that are formed through the consumer's own psychological, physiological and behavioral attributes and the complexities of the challenge can seem to be insurmountable. The complexity of the situation increases exponentially when, as our research seems to indicate, the psychological and behavioral components can be compounded by such little understood dimensions as ambivalence and vicarious sociality. There is light at the end of the tunnel. Retailers need to benefit themselves by reaching out the broad resources of research to effectively develop the resource information necessary to successfully position themselves relative to their consumers expectations. Although there is ample empirical evidence that trust in risk regulation is strongly related to the perception and acceptability of risk, it is less clear what the direction of this relationship is. This article explores the nature of the relationship, using three separate data sets on perceptions of genetically modified (GM) food among the British public. The article has two discrete but closely interrelated objectives. First, it compares two models of trust. More specifically, it investigates whether trust is the cause (causal chain account) or the consequence (associationist view) of the acceptability of GM food. Second, this study explores whether the affect heuristic can be applied to a wider number of risk-relevant concepts than just perceived risk and benefit. The results suggest that, rather than a determinant, trust is an expression or indicator of the acceptability of GM food. In addition, and as predicted, "affect" accounts for a large portion of the variance between perceived risk, perceived benefit, trust in risk regulation, and acceptability. Overall, the results support the associationist view that specific risk judgments are driven by more general evaluative judgments The implications of these results for risk communication and policy are discussed.  相似文献

In recent years, European countries have witnessed a number of food crises such as dioxin-contaminated chicken, foot-and-mouth disease, and BSE. In such cases, food might be contaminated by microorganisms or chemicals that could pose a risk to the consumer. These cases attract media attention and might instigate the consumer to reduce the consumption of the allegedly contaminated products. Although a decline in consumption of (potentially) contaminated products has been observed, it is not yet clear what determines the individual's reaction to food risk messages. To study the psychological determinants of the reaction to food risk messages, a survey was conducted in the Netherlands (n= 280). Subjects had to imagine two situations involving chicken contamination and report how they would react behaviorally if this situation occurred. Risk perception, affective response, perceived susceptibility to foodborne disease, self-efficacy, outcome expectation, trust, experience with foodborne disease, and need for information were also assessed. It was found that 60% of the subjects would allegedly avoid the risks by not consuming chicken for a while and approximately 60% would seek additional information. Risk avoidance was significantly related to information seeking and the psychological determinants, especially risk perception, affective response, need for information, perceived susceptibility to foodborne disease, and trust. Seeking information was also significantly related to risk perception, affective response, need for information, susceptibility to foodborne disease, and trust, but to a lesser degree. A model describing the relationships between the variables was tested using AMOS. Results are presented and implications are discussed.  相似文献

This paper explores the food safety implications of insurance products that compensate for business losses when food contamination causes a processing firm to initiate a recall. Discoveries of meat and poultry product contamination, in particular life-threatening pathogens, are increasing. The financial losses that follow a recall can be substantial as illustrated by several recent U.S. cases—Hudson Foods, Bil Mar, and Thorn Apple Valley Inc. Additionally, contaminated food product that escapes the current recall system poses a threat to consumer safety. The conceptual analysis presented here suggests that insurance underwriters could motivate earlier recalls and more diligent implementation of Hazard Analysis and Critical Control Point (HACCP). With sound underwriting, these changes could ultimately reduce the incidence of illness and death from foodborne pathogens.  相似文献

Risk perception researchers have observed a "negativity bias" for hazard-related information. Messages indicating the presence of risk seem to be trusted more than messages indicating the absence of risk, and risk perceptions seem more affected by negative than positive information. Two experiments were conducted to examine alternative explanations of this finding within the area of food additives. Study 1 (N = 235) extended earlier work by (a) unconfounding message valence (positive or negative) from message extremity (definite or null finding) and (b) exploring the role of prior attitudes. Results suggested that negative/risky messages were indeed trusted more even when extremity was taken into account. However, prior attitudes significantly moderated the effect of message valence on trust. Positive messages were distrusted only by those with negative prior attitudes. Study 2 (N = 252), further explored the role of prior attitudes and extended the work by examining reactions to risky messages about a positively viewed additive--a vitamin. The results again found a moderating effect of prior attitudes on message valence. Participants had greater confidence in messages that were more congruent with their prior attitudes, irrespective of valence. Furthermore, positive messages had a greater impact on risk perception than negative messages. These findings suggest that greater trust in negative messages about hazards may be a product of a "confirmatory" rather than a "negativity" bias.  相似文献
