MY late grandmother was one of the last generation of women who had bound feet. In the beginning of this century, she was born in a small remote village inhabited by the Mongol and Han nationalities. In those years her mother bound her childish feet tightly, using strips of cloth, so her feet remained small and pointed. Although I didn't know much about life when I was a child, I often felt constrained at the sight of my grandmother's bound feet. IN those days, when heavy snow sealed the mountain passes, it was only the sight of red paper-cuts on the windows which said to me there were people living in those houses covered with deep and solid snow. Every time I travel to the Northwest, I have come across paper-cutters who touch me so deeply that I can't forget their faces even long after I return to the city. Sometimes in the harsh winters of the Northwest, there is no color but the monotonous white of the snow until the lively red of the paper-cuts spring into sight. FOREIGNERS who have been to Beijing are probably familiar with the Beijing International Hotel near the main railway station. It's the four-star hotel where I work as a chief cook. My job is to manage nine kitchens—both Chinese and Western. I have been a chef for 34 years. After graduated from school in 1964, I studied Chinese cuisine for three years. I believed that it was a job worth doing. In the past, people looked down on this occupation; they thought it was a low-class job because cooks were always serving other people. I, however, found the job very interesting. After all, I reasoned, everyone needs to eat. If we could make eating into a kind of art or a science, eating could become an act of culture. People engaged in the food industry treat the act of eating with a respect that most people cooking at home do not feel. But for those of us who work in prestigious hotels whose guests come from all over the world and have different customs and tastes, it is our job to put the Chinese cooking cultu  相似文献

Iarrived at the International Hotel a little too late to get onto the shuttle bus which had been designated to take participants to the NGO Forum site in Huairou. I stood at the front of the hotel and readily identified several other women who appeared to be in the same predicament. Quite resourceful, we quickly gathered into groups of three and made plans to share taxis out to the conference site. Iremember clearly how despaired I was seven years ago when I received the doctor's diagnosis of my illness—multiple hysteromyoma. "Mum, you'd better to have the operation," said my 15-year-old son. "Ⅰ'Ⅱ go to the hospital to take care of you." His mention of the operation disheartened me, because I had already had three operations. During these operations, it was my husband who helped me through the difficulties. He cooked delicious food for me and took care of my daily needs. But he has passed away. In the previous two columns, we discussed how to get the most, as a mentee, from a partnership with a mentor, as well as the benefitsof mentoring others.
