We describe a one-dimensional probabilistic model of the role of domestic food handling behaviors on salmonellosis risk associated with the consumption of eggs and egg-containing foods. Six categories of egg-containing foods were defined based on the amount of egg contained in the food, whether eggs are pooled, and the degree of cooking practiced by consumers. We used bootstrap simulation to quantify uncertainty in risk estimates due to sampling error, and sensitivity analysis to identify key sources of variability and uncertainty in the model. Because of typical model characteristics such as nonlinearity, interaction between inputs, thresholds, and saturation points, Sobol's method, a novel sensitivity analysis approach, was used to identify key sources of variability. Based on the mean probability of illness, examples of foods from the food categories ranked from most to least risk of illness were: (1) home-made salad dressings/ice cream; (2) fried eggs/boiled eggs; (3) omelettes; and (4) baked foods/breads. For food categories that may include uncooked eggs (e.g., home-made salad dressings/ice cream), consumer handling conditions such as storage time and temperature after food preparation were the key sources of variability. In contrast, for food categories associated with undercooked eggs (e.g., fried/soft-boiled eggs), the initial level of Salmonella contamination and the log10 reduction due to cooking were the key sources of variability. Important sources of uncertainty varied with both the risk percentile and the food category under consideration. This work adds to previous risk assessments focused on egg production and storage practices, and provides a science-based approach to inform consumer risk communications regarding safe egg handling practices.  相似文献

Consumer Phase Risk Assessment for Listeria monocytogenes in Deli Meats   总被引:1,自引:0,他引:1  
The foodborne disease risk associated with the pathogen Listeria monocytogenes has been the subject of recent efforts in quantitative microbial risk assessment. Building upon one of these efforts undertaken jointly by the U.S. Food and Drug Administration and the U.S. Department of Agriculture (USDA), the purpose of this work was to expand on the consumer phase of the risk assessment to focus on handling practices in the home. One-dimensional Monte Carlo simulation was used to model variability in growth and cross-contamination of L. monocytogenes during food storage and preparation of deli meats. Simulations approximated that 0.3% of the servings were contaminated with >10(4) CFU/g of L. monocytogenes at the time of consumption. The estimated mean risk associated with the consumption of deli meats for the intermediate-age population was approximately 7 deaths per 10(11) servings. Food handling in homes increased the estimated mean mortality by 10(6)-fold. Of all the home food-handling practices modeled, inadequate storage, particularly refrigeration temperatures, provided the greatest contribution to increased risk. The impact of cross-contamination in the home was considerably less. Adherence to USDA Food Safety and Inspection Service recommendations for consumer handling of ready-to-eat foods substantially reduces the risk of listeriosis.  相似文献

Ranked set sampling (RSS) design as a cost-effective sampling is a powerful tool in situations where measuring the variable of interest is costly and time-consuming; however, ranking information about sampling units can be obtained easily through inexpensive and easy to measure characteristics at little or no cost. In this paper, we study RSS data for analysis of an ordinal population. First, we compare the problem of non-representative extreme samples under RSS and commonly-used simple random sampling. Using RSS data with tie information, we propose non-parametric and maximum likelihood estimators for population parameters. Through extensive numerical studies, we investigate the effect of various factors including ranking ability, tie generating mechanisms, the number of categories and population setting on the performance of the estimators. Finally, we apply the proposed methods to the bone disorder data to estimate the proportions of patients with osteopenia and osteoporosis status.  相似文献

Optimization of multi-response problems is a popular subject in the literature. However, the problem becomes complicated when the responses are functional due to the existence of signal factors. In this article, we have proposed a combined index to optimize multivariate multiple functional responses by considering functional specification limits and a target. The relation among the responses and controllable factors is characterized by polynomial equations to consider the curvature of the response functions. The validity of the proposed method is checked by a simulation example. To show the applicability of the proposed method, a real case about Tehran air quality is analyzed. Latitude and longitude are considered to be signal factors, and different pollutant values are responses of the experiment. Government policies in each time interval are considered as controllable factors. Finally, an optimization algorithm is used to find the best decisions for government policies.  相似文献

Adaptive control charts have been developed for improving the capability of control charts in detecting small shifts. In this article, we propose a new exponential weighted moving average control chart with variable sample size, in which the sample size is determined as an integer linear function by EWMA statistic value. The performance of the proposed VSS EWMA control chart is compared with FSS EWMA as well as traditional VSS EWMA control charts. The results show the better performance of the proposed VSS strategy respect to the traditional one and fixed sample size.  相似文献

In recent years, risk-adjusted control charts that account for the preoperative risk of patients have been widely used for monitoring of surgical outcomes. Generally, risk-adjusted control charts have been developed on the basis of a binary classification of surgical outcomes. However, for a patient who survives an operation, it is reasonable to consider different grades of recovery in an ordinal manner. On the other hand, Phase I monitoring of risk-adjusted control charts has been neglected. Hence, in this paper, a general Phase I risk-adjusted control chart is proposed to monitor ordinal outcomes of surgical outcomes. The proposed risk-adjusted model is developed on the basis of proportional odds logistic regression models. The application of the proposed model is illustrated by analyzing the data in a case study and its performance is evaluated using a Monte Carlo simulation study.  相似文献

Diagnosis aids in addition to detecting the out-of-control state is an important issue in multivariate multiple linear regression profiles monitoring; because a large number of parameters and profiles in this structure are involved. In this paper, we specifically concentrate on identification of profile(s) and parameter(s) which have changed during the process in multivariate multiple linear regression profiles structure in Phase II. This article demonstrates application of sensitivity analysis to risk assessment models with two-dimensional probabilistic frameworks that distinguish between variability and uncertainty. A microbial food safety process risk (MFSPR) model is used as a test bed. The process of identifying key controllable inputs and key sources of uncertainty using sensitivity analysis is challenged by typical characteristics of MFSPR models such as nonlinearity, thresholds, interactions, and categorical inputs. Among many available sensitivity analysis methods, analysis of variance (ANOVA) is evaluated in comparison to commonly used methods based on correlation coefficients. In a two-dimensional risk model, the identification of key controllable inputs that can be prioritized with respect to risk management is confounded by uncertainty. However, as shown here, ANOVA provided robust insights regarding controllable inputs most likely to lead to effective risk reduction despite uncertainty. ANOVA appropriately selected the top six important inputs, while correlation-based methods provided misleading insights. Bootstrap simulation is used to quantify uncertainty in ranks of inputs due to sampling error. For the selected sample size, differences in F values of 60% or more were associated with clear differences in rank order between inputs. Sensitivity analysis results identified inputs related to the storage of ground beef servings at home as the most important. Risk management recommendations are suggested in the form of a consumer advisory for better handling and storage practices.  相似文献
