The high-end restaurant segment in Britain and Germany has long been shaped by the cultural hegemony of French haute cuisine, perpetuated by multiple processes, including the influence of the Michelin or Red Guide. Traditionally, this hegemony has been expressed in the prevalence of French expatriate chefs, culinary techniques and style and even restaurant culture. This paper investigates whether processes of globalization have weakened or even undermined this French cultural dominance in fine-dining restaurants and their culinary culture. To this end, the study identifies the various forms taken by globalization processes in this industry segment and then assesses their impact on the dominance of the French paradigm of culinary culture. The investigation focuses on British and German Michelin-starred restaurants, underlining both commonalities and divergences in the process of interaction between French, global and local influences. The study employs a qualitative method, using a number of case studies to discern cross-industry patterns. All chefs with two or three stars in the two countries, i.e. 45 chefs, were selected for the analysis of their cuisine.  相似文献

This paper has two objectives: to contrast patterns of female labour market participation in three West European societies and to develop a theoretical approach which can encompass both universal features of gender divisions in the labour market and nationally specific ones. Empirically, the focus is on the different levels and forms of labour force participation over the female life cycle, particularly on any resul-tant employment casualization. Consideration is also given to patterns of horizontal and vertical segregation and to pay. The differences between the three countries are explained by positing the existence of nationally specific gender profiles with a differential impact on labour market patterning along gender lines. These profiles are constructed by gender regimes at the level of the state which, in turn, are the result of political struggles and compromises of a variety of political actors. Quantitative risk assessment involves the determination of a safe level of exposure. Recent techniques use the estimated dose-response curve to estimate such a safe dose level. Although such methods have attractive features, a low-dose extrapolation is highly dependent on the model choice. Fractional polynomials, basically being a set of (generalized) linear models, are a nice extension of classical polynomials, providing the necessary flexibility to estimate the dose-response curve. Typically, one selects the best-fitting model in this set of polynomials and proceeds as if no model selection were carried out. We show that model averaging using a set of fractional polynomials reduces bias and has better precision in estimating a safe level of exposure (say, the benchmark dose), as compared to an estimator from the selected best model. To estimate a lower limit of this benchmark dose, an approximation of the variance of the model-averaged estimator, as proposed by Burnham and Anderson, can be used. However, this is a conservative method, often resulting in unrealistically low safe doses. Therefore, a bootstrap-based method to more accurately estimate the variance of the model averaged parameter is proposed.  相似文献

Cape Queer is a case study that details how sexuality intersects with race, gender, and class in the development of the gay and lesbian resort community, Provincetown, Massachusetts. It asks scholars to pay closer attention to the ways in which methodologies and practices utilizing LGBT studies and queer theory can combine rather than separate to interrogate LGBT and queer histories, politics and communities. In the process, it assesses how the global mechanics of capitalism led to the local queering and eventually un-queering of a gentrified, white, gay and lesbian enclave.  相似文献

Caring is conceived as a corrective to a self-optimizing behaviour that follows the strategies of the market. The perspective on conflicts about the recognition of needs for care is used as a focus to look at processes diagnosed as the ?corrosion of character“. Following feminist theories, care is conceptualised in its meaning as relationship and communication, on the one hand and as a basic experience to foster democratic activities of women and men as citizens, on the other. The intersubjective constitution of the capability for and experience of care is influenced by social conditions, especially those of gender relations. Where the bourgeois-industrial gender order is eroding new gender arrangements are possible and necessary to combine caring practices and strategies to secure economic existence, and also to redefine privacy.  相似文献

This paper contributes to the literature on entrepreneurial leadership development. Leadership studies are characterized by an increasing emphasis given to an individual leader's social and organizational domain. Within the context of human capital and social capital theory, the paper reflects on the emergence of a social capital theory of leadership development. Using a retrospective, interpretivist research method, the authors present the experience of a cohort of business leaders on an executive development programme to uncover the everydayness of leadership development in practice. Specifically, they explore how entrepreneurial leadership develops as a social process and what the role of social capital is in this. The findings suggest that the enhancement of leaders’ human capital only occurred through their development of social capital. There is not, as extant literature suggests, a clear separation between leader development and leadership development. Further, the analysis implies that the social capital theory of leadership is limited in the context of the entrepreneurial small firm, and the authors propose that it should be expanded to incorporate institutional capital, that is, the formal structures and organizations which enhance the role of social capital and go beyond enriching the human capital stock of individual leaders.  相似文献

In the first section of this article, the authors Christel Gilles and Antoine Parent, argue that in France, public policy and the pension system provide financial incentives favoring early retirement. The implementation of “bridge jobs” to facilitate the transition from full employment to full retirement, could, in theory, lessen the long-term decline in employment rates of men and women. Gilles and Parent, in the second section, question the idea that rising labor force participation rates among women are adequate to narrow pension inequalities between men and women. Regarding this point, we also note that since women's careers are generally shorter than men's and their labor income remains, on average, lower, an increase, in female labor force participation would lead, in an occupational-based system, to a substitution effect between direct and indirect entitlements. The impact of this effect on pension gender inequalities remains uncertain. In the third section, the authors examine, from a gender perspective, other pension reform options that may, in theory, provide greater gender equality, but that are, in practice, far from the implementation phase.  相似文献
