A model for the assessment of exposure to Listeria monocytogenes from cold-smoked salmon consumption in France was presented in the first of this pair of articles (Pouillot et al ., 2007, Risk Analysis, 27:683–700). In the present study, the exposure model output was combined with an internationally accepted hazard characterization model, adapted to the French situation, to assess the risk of invasive listeriosis from cold-smoked salmon consumption in France in a second-order Monte Carlo simulation framework. The annual number of cases of invasive listeriosis due to cold-smoked salmon consumption in France is estimated to be 307, with a very large credible interval ([10; 12,453]), reflecting data uncertainty. This uncertainty is mainly associated with the dose-response model. Despite the significant uncertainty associated with the predictions, this model provides a scientific base for risk managers and food business operators to manage the risk linked to cold-smoked salmon contaminated with L. monocytogenes. Under the modeling assumptions, risk would be efficiently reduced through a decrease in the prevalence of L. monocytogenes or better control of the last steps of the cold chain (shorter and/or colder storage during the consumer step), whereas reduction of the initial contamination levels of the contaminated products and improvement in the first steps of the cold chain do not seem to be promising strategies. An attempt to apply the recent risk-based concept of FSO (food safety objective) on this example underlines the ambiguity in practical implementation of the risk management metrics and the need for further elaboration on these concepts. 相似文献

A quantitative assessment of the exposure to Listeria monocytogenes from cold-smoked salmon (CSS) consumption in France is developed. The general framework is a second-order (or two-dimensional) Monte Carlo simulation, which characterizes the uncertainty and variability of the exposure estimate. The model takes into account the competitive bacterial growth between L. monocytogenes and the background competitive flora from the end of the production line to the consumer phase. An original algorithm is proposed to integrate this growth in conditions of varying temperature. As part of a more general project led by the French Food Safety Agency (Afssa), specific data were acquired and modeled for this quantitative exposure assessment model, particularly time-temperature profiles, prevalence data, and contamination-level data. The sensitivity analysis points out the main influence of the mean temperature in household refrigerators and the prevalence of contaminated CSS on the exposure level. The outputs of this model can be used as inputs for further risk assessment. 相似文献

This article deals with conceptual development in an emerging activity, Technical diving. Tech divers are equipped with innovative, complex machines (the “rebreathers”) to perform deep dives. The developmental methodology of cross self-confrontation was used to investigate the psychological dimensions of safety in diving with a group of volunteers (divers and instructors). One sequence of these data helps us analyze carefully the development of one concept in use in this milieu, the “confidence in the machine.” Building on 30 years of French-speaking research in work analysis on conceptualization in the work activity, we highlight the conflicting nature of the professional concepts as well as their multifunctionality. In the sequence analyzed in this article, the conceptual development takes the form of the discursive discovery of this complexity, which may open new possibilities for action (here, through the transmission of renewed concepts to other practitioners). The argumentative logics of the dialogical framework requires from the participants that they go beyond well-established knowledge to be able to convince both the researcher and their colleague. However, the stabilization of the concept emerging in this debate is related to its double anchoring: anchoring both in the emotions of the participants and in the professional genre of the milieu. This article shows the potential of the developmental methodology of cross self-confrontations in conceptual development: combining careful observation of routine behaviors, comparisons of personal habits, and thorough discussion of convergences and discrepancies, the methodology encourages reflexive practice and conceptual renewal. 相似文献

Frank Dobbin's Inventing equal opportunities, published by Princeton University Press in 2009, has arrived at just the right time in a France where the theme of “diversity” has permeated big firms and where equal opportunity policies are being debated in the educational system, which, from kindergarten to university, is being accused of fostering inequality. This book provides a stimulating, innovative contribution to our understanding not only of these questions in the United States but also of the French case. We thought it was time to organize a symposium on a book that recounts and dissects nearly fifty years of development in equal opportunity policies in the United States. To fully describe the wealth of information in this book, we asked authors with different disciplinary perspectives to take part. By analyzing social movements, public actions, the legal system and occupational forms of mobilization, Frank Dobbin has revitalized and challenged accepted ideas about the role of public players in regulating behavior. What Do We Mean by Performativity in Organizational and Management Theory? The Uses and Abuses of Performativity 下载免费PDF全文
John Austin introduced the formulation ‘performative utterance’ in his 1962 book How to Do Things with Words. This term and the related concept of performativity have subsequently been interpreted in numerous ways by social scientists and philosophers such as Lyotard, Butler, Callon and Barad, leading to the coexistence of several foundational perspectives on performativity. This paper reviews and evaluates critically how organization and management theory (OMT) scholars have used these perspectives, and how the power of performativity has, or has not, stimulated new theory‐building. In performing a historical and critical review of performativity in OMT, the authors’ analysis reveals the uses, abuses and under‐uses of the concept by OMT scholars. It also reveals the lack of both organizational conceptualizations of performativity and analysis of how performativity is organized. Ultimately, the authors’ aim is to provoke a ‘performative turn’ in OMT by unleashing the power of the performativity concept to generate new and stronger organizational theories. 相似文献
