豫菜文化的历史、现状与前瞻

摘    要:豫菜文化是中国烹饪文化衍生、发展的基石,在中国烹饪文化发展史中占据重要地位。本文回顾了豫菜文化发展的悠久历史,论述了其历史影响,并从豫菜文化的现状入手,分析了我国餐饮业的发展趋势,提出了振兴豫菜的相应对策:第一,要得到中共河南省委、省政府的重视;第二,要加大宣传力度,大力推广豫菜;第三,要注重培养豫菜烹饪人才;第四,要大胆借鉴和创新,提倡拿来主义;第五,要大力发展豫菜加工业;第六,要充分发挥行业协会的作用。

Abstract:As the foundation of China cooking's derivation and development,Henan dish culture occupy the important strtus in China.This article expounded the influence of Henan dish by way of reviewing the long history of Henan dish,analysed the tendency that food and drink trade developed in our country and puts forward the countermeasure that vitalize Henan dish:Firstly, the government of Henan province should attach great importance to Henan dish. Secondly, should enhance propagating. Thirdly, should foster the talent of Henan dish. Fourthly, should encourage the bold innovation. Fifthly, give energetic support to Henan dish industry. Sixthly, give full play to the function of the association.
