细菌纤维素的生产及其在食品工业中的应用

摘    要:细菌纤维素拥有膳食纤维的诸多优点,具有独特的生理功能.细菌纤维素具有预防心脑血管疾病、糖尿病、便秘、结肠癌、直肠癌、脂肪肝以及吸附人体内毒素等功用,所以在食品工业中应用十分广泛.本文简要介绍细菌纤维素的生产过程以及其在食品工业上的应用.

Abstract:Bacterial cellulose is a kind of dietary fiber, it possesses many advantages of dietary fiber and has a unique physiological function. Since BC can be utilized to prevent cardiovascular and cerebrovascular diseases, diabetes diseases, constipation, colon and colorectal cancer, fatty liver, etc, and absorb toxins in the human body, BC has a widely application in the foods industry. This article briefly describes the pro- duction process of BC as well as its application in the food industry.
