| 摘 要： | 从李子皮中提取的天然红色素是一种安全无毒的食用色素。本就提取溶剂、温度、时间、pH值等因素对提取率的影响进行了系统的研究，结果表明，最佳的浸取工艺条件是：pH=2的50％乙醇，室温下(20—25℃)浸提1．5-2h。
