青香蕉抗性淀粉提取条件优化

摘    要:在研究酶添加量、水解时间、温度等因素对果胶酶活性影响的基础上,通过正交试验确定提取青香蕉淀粉的最适水解条件为料液比1:2、温度45℃、酶解时间50min,此时淀粉得率为4.67%.

Abstract:On the basis of the volume of enzyme, hydrolysis time, temperature and other factors on the activity of pectinase extraction. To determine the hydrolysis conditions of the optimal Green banana starch by orthogonal test. The result was the material and liquid ratio 1 : 2, temperature 45℃, time 50 min, at this time starch yield was 4.67 percent.
