中西菜肴命名对比及中式菜肴英译方法探究

摘    要:由于中西方饮食文化的差异,中西菜肴命名有较大的差异。中式菜肴命名特点常以菜肴的发明者或盛放菜肴的容器,以及以蕴含吉祥、古诗、传说或趣事命名菜肴,也用数字、谐音、夸张、拟人等手法命名菜肴,而西式菜肴命名特点按配料、烹饪法或菜肴形状或地点命名。因此,中式菜肴一般以英译时应充分意识到这种差异,中式菜肴翻译强调求实避虚,力求简洁,注重交际功能,强调接受者需求,以目的语文化为归宿,达到功能对等。一般做法是采取配料、烹饪技巧或辅料直译法,或配料、烹饪技巧或辅料解释加意译法,音译法和“移花接木”法。

Abstract:According to a comparison between the ways Chinese and Western dishes are respectively named,the principles and methods of the translation of Names of Chinese dishes into English are put forward.Translating means communicating,and this process depends on the circumstances of the target-language culture and on the extent to which receptors correctly understand and appreciate the translated text and it finally leads to functional equivalence.
