| Abstract: | The technique of microwave aided extraction (MAE) has been paid more and more attention to in food processing industry. The principle research , affecting factors and instruments as well of MAE are being discussed in the present article. People have already been aware that compared with traditional methods,MAE has its own special superiority . In the year 1986, American scientists began to take advantage of microwave to extract organic compounds by reasonable methods which developed the technique of MAE used in food industry. |
