北宋时期中原居民的副食结构

摘    要:北宋时期的中原居民的副食以蔬菜为主,以肉类为辅。与前代相比,由于外地的羊、鱼虾等食物原料的大量输入,北宋时期中原居民的肉食结构发生了一些变化,在肉食消费上,人们以猪肉、羊肉为主,以鱼虾鹑兔等为辅。素菜日益受到人们的重视,获得了较大发展,开始成为一个独立的菜系。

Abstract:The inhabitants of the Central Plains Area took vegetable as their main dishes, meat as their auxiliary dishes in the Northern Song Dynasty. Compared to the past dynasties, the structure of the meat dishes of the inhabitants of the Central Plains Area had took place some changes because a lot of food materials such as goals, fish and shrimps etc. were carried into the Central Plains Area from other areas of the country in the Northern Song Dynasty. Pork and mutton were severed as their main meat dishes, while fish, shrimp quails and rabbits as their auxiliary meat dishes. Vegetable dishes were attached increasingly with importance. They developed greatly and changed into one of the self-governed systems of dishes.
