| 摘 要： | 岳阳巴陵全鱼席之所以能成为湘菜一绝,是因为其深厚的文化传承和独特的烹制工艺。但在新的历史条件下,由于不能适应大众化餐饮变革,以及在历史演变过程中岳阳旅游餐饮企业的新旧格局不能形成有效的延续,加之后来岳阳旅游经济发展趋缓,本世纪以来,巴陵全鱼席走向了衰落。为了重振雄风,必须迅速打破＂官府宴＂与＂贵族宴＂的局限,实现巴陵全鱼席向＂大众宴＂的转变,同时强化旅游职能部门与行业协会的监管、协调和指导力度,实现岳阳旅游经济的跨越式发展。

| Abstract: | The whole fish banquet of Baling in Yueyang becomes a special and unique delicious food in Xiang-food series,because its profound cultural heritage and unique cooking process to a large extent.In the new historical conditions,because it can not adapt popular food revolution,the structure of Yueyang food enterprises can not spread effectively in the historical evolution process,and the tourism economy of Yueyang has being developed slowly in recent years so as to bring about the decline of whole fish banquet... |
