Abstract:The technological process of vacuum freezing and drying Tricholoma Matsutake was detailed in this paper.Through comparing physical and chemical characters of vacuum freezing and drying Tricholoma Matsutake with those of vacuum traditional Tricholoma Matsutake , advantages of freezing and drying technology were proved.
