摘    要:食品蒸制技术是以水蒸气为传热介质,对食物进行熟化定型的食品加工技术,是迄今世界上最先进、最安全、最经济、最便捷的主食品加工技术。它的发明使人类的饮食生活达到一个新境界,它与带动工业革命的蒸汽机的发明具有同等重要的历史地位。蒸制面类主食品的品质优于其他类型的主食品,以馒头为代表的蒸制面类主食品应该成为当今人类主食品的第一选择。

Abstract:Food-making via steaming technology is a technology for food-processing that uses water vapour as the medium of conducting heat and is used for cooking along with finalizing the food. It is the safest , most advanced, economical and convenient technology for processing staple food. It has improved people' s dietetic life and has played the same important historical part as the invention of steam engine which promoted the Industrial Revolution. The quality of steamed wheaten food is superior to that of other staple food. Mantou should be people' s first choice as the representative of steamed wheaten food of staple food.
