家蚕蛹营养成分分析

摘    要:24h蛹龄家蚕(Bonbyx mori)蛹干粉中,蛋白质和脂肪含量分别为52.5%和31.8%;氨基酸含量为43.2%,必需氨基酸占总氨基酸的39.5%;所测7种必需氨基酸中,苯丙氨酸为唯一的限制性氨基酸,其分值为0.89;所测5种矿质元素中,镁和铜的含量丰富,100g干物质中含量分别达37.8mg和0.27mg.干粉中蛋白质百分含量、每头鲜蛹中蛋白质含量和每头蛹中氨基酸含量,都在化蛹72h以后显示快速下降趋势.

Abstract:The contents of protein and fat in the dry powder from the 24 - hour pupae of silkworm,Bombyx mori L are 52.5 % and 31.8 %, respectively. The total amino acid content is 43.2% and the essential amino acid is 39.5 % of the TAA. The phenylalanine is the only limiting amino acid in the 7 estinated EAAs and its score is 0.89. Of the 5 determined minerals, magnesium and copper are rich and their contents are 37.8mg/100g dry wt and 0.27mg/100g dry wt, respectively. However, rapid decreases of the percentage of protein in dry powder, the contents of protein and amino acid in a fresh pupa appear after the pupae age is over 72 hours.
