大豆研究开发的前景及意义

摘    要:大豆营养价值高,资源丰富,原料成本低。食品工业的飞速发展迫切需要具有功能特性和营养特性的蛋白质,作为食品的原料成分或添加基料。除了提供人体所必需的氨基酸外,还具有一定的加工特性和生理活性。为此,加强或改善大豆的功能特性和生物活性,开发新的功能食品,成为食品及医疗保健业亟待解决的问题。在食品、医疗等领域,大豆的研究与应用备受国内外的关注。

Abstract:The soybeans nourishment value is high,the resources is abundant,the material cost is low. IThe protein of the nourishmental characteristic and the functional characteristic is urgently needing with the develop of the food industry ,being used as the raw materiacal composition and the additional of the food. In addition to providing the human body an effective amino acids,still have the process characteristic certainly and physiology activity. So, it is the urgent problem of solution in the field of food and medical treatment , health care industry to enhance the function of bioactive of protein develop the new functional food. The extensive foreground of development and application in the realm of food , medicine is enjoyed by the domestic and internation.
