水解叶蛋白的高效蛋白酶的筛选研究

摘    要:选择3种不同来源的蛋白酶,即碱性蛋白酶、胰蛋白酶、木瓜蛋白酶,利用正交试验L9(3^4)考察它们对叶蛋白水解的催化效能的高低及反应时间、温度及pH三因素对酶促水解的影响作用.结果表明,3种酶中碱性蛋白酶的效能最高;反应时间、温度及pH三因素中,影响最大的是pH值;叶蛋白适于偏碱性条件下水解.

Abstract:The leaf protein's hydrolysis is catalyzed by three kinds of proteases with different resources,e.g. alkaline protease,trypsin and papain,and their catalytic activity are studied in the orthogonal test (L 9(3 4));Effects of infl uencing factors on hydrolysis,including pH value,temperature,and hydrolysis t ime,are also investigated. The result reveals: the alkaline protease is the one with the highest activity among them;within the three factors,pH value is the most effective;and the optimal pH value of the leaf protein's hydrolysis is un der alkaline condition.
